Chilli and Eggplant Relish Recipe


  • 1/2 eggplant
  • 5 banana chillies
  • 6 cloves garlic
  • 1/2 tsp salt
  • 3 Tbsp olive oil


  1. Prick surface of eggplant with a fork, then roast along with chillies for 40 minutes at 230°C.
  2. Remove skin on all vegetables and saute with crushed garlic cloves and olive oil.
  3. Add salt and cook about 5 to 10 minutes on medium heat or until it reaches a semi-dry consistency.
  4. Blend at medium speed setting, then transfer into jar. Keep in refrigerator for up to 2 weeks.
