I’ve shown you in my previous YouTube videos how to make your own chilli paste and how to prepare dried shrimp. In this next segment, I’m going to show you how to use these two ingredients in one recipe.
Sambal Recipe
INGREDIENTS:
¼ cup oil (I’m using Carotino)
1 cup dried shrimp, soaked, drained and lightly pounded
¾ cup chilli paste
1 cup fresh onions, finely diced, or fried shallots
4 Tbsp garlic, minced
4 Tbsp oyster sauce
2 Tbsp belacan
1 Tbsp sugar (optional)
METHOD:
1. Heat oil in frying pan.
2. Add dried shrimp and garlic. If using fresh onions, add now.
3. Fry 1 minute, then add belacan.
4. Add chilli paste, oyster sauce and sugar.
5. Add fried shallots if using.
6. Mix well, then remove from heat.
7. Allow to cool, then store in fridge or freezer.
8. Use about 3 Tbsp per serving of Kangkung Belacan.
