How to Make Roti Jala (Lacy Coconut Pancakes)

Ps. I mentioned eggs at the start of the video and proceeded to forget about them, which would explain why the batch I did On Air was a bit soft. I added an egg to the remaining batter off-air and the pic here is the result.

Roti Jala (aka Lacy Coconut Pancakes) Recipe

INGREDIENTS:

  • 200g plain flour
  • 250ml water
  • 250ml coconut cream
  • 2 eggs
  • ½ tsp salt
  • 2 Tbsp sugar (for sweet pancakes; use only 1 tsp or omit altogether if serving pancakes with curry)
  • Melted butter or ghee for cooking

METHOD:

  1. Combine ingredients in blender and mix well.
  2. Brush pan with a little melted butter or ghee. Heat until it starts to smoke.
  3. Transfer batter into squeeze bottle and drizzle onto pan in a lacy pattern.
  4. Cook on one side only, until bubbles pop.
  5. Fold into triangles or rolls.
