Ps. I mentioned eggs at the start of the video and proceeded to forget about them, which would explain why the batch I did On Air was a bit soft. I added an egg to the remaining batter off-air and the pic here is the result.
Roti Jala (aka Lacy Coconut Pancakes) Recipe
INGREDIENTS:
- 200g plain flour
- 250ml water
- 250ml coconut cream
- 2 eggs
- ½ tsp salt
- 2 Tbsp sugar (for sweet pancakes; use only 1 tsp or omit altogether if serving pancakes with curry)
- Melted butter or ghee for cooking
METHOD:
- Combine ingredients in blender and mix well.
- Brush pan with a little melted butter or ghee. Heat until it starts to smoke.
- Transfer batter into squeeze bottle and drizzle onto pan in a lacy pattern.
- Cook on one side only, until bubbles pop.
- Fold into triangles or rolls.
