Sambal Ikan Bilis Recipe
INGREDIENTS:
- 2 large brown onions
- 1 cup chillies or ½ cup chilli paste
- 1 Tbsp minced lemongrass
- 2 tsp belacan powder (shrimp paste) – optional
- 2 tsp chicken stock granules
- 5 Tbsp sugar
- 3 Tbsp tamarind concentrate (amount varies depending on type)
- 4 Tbsp oil
- 2 cups dried anchovies – rinse, pat dry, then fry until crispy (video at bottom)
METHOD:
- Process onions and chilies in food processor until smooth.
- Combine lemongrass and onion & chilli mixture and fry until some of the liquid from the onions is reduced.
- Add oil and fry 10 minutes.
- Add all other ingredients and fry until oil separates. Adjust seasoning as required.
- Remove from heat and serve with crispy anchovies.
