How to Make Sambal Ikan Bilis

Sambal Ikan Bilis Recipe


  • 2 large brown onions
  • 1 cup chillies or ½ cup chilli paste
  • 1 Tbsp minced lemongrass
  • 2 tsp belacan powder (shrimp paste) – optional
  • 2 tsp chicken stock granules
  • 5 Tbsp sugar
  • 3 Tbsp tamarind concentrate (amount varies depending on type)
  • 4 Tbsp oil
  • 2 cups dried anchovies – rinse, pat dry, then fry until crispy (video at bottom)


  1. Process onions and chilies in food processor until smooth.
  2. Combine lemongrass and onion & chilli mixture and fry until some of the liquid from the onions is reduced.
  3. Add oil and fry 10 minutes.
  4. Add all other ingredients and fry until oil separates. Adjust seasoning as required.
  5. Remove from heat and serve with crispy anchovies.
