Fried rice is kind of a fridge clear-out type of dish for me, rather than something I plan ahead of time. The ingredients in this particular recipe, I guess, will give you an insight into what my Asian pantry/fridge contains – salted eggs, century eggs, salted fish, leftover boiled rice, that sort of stuff 🙂
Don’t despair if you don’t have those ingredients at hand; really, the only indispensable ingredient here is the rice; the rest you can replace with whatever you need to clear out (within reason, clearly).

INGREDIENTS:
- 1/2 Tbsp oil
- 1 cup cold jasmine rice
- 2 tsps minced garlic
- 1/2 tsp chicken powder
- 2 fresh eggs
- dash of pepper
- Optional ingredients:
- 1/2 century egg, diced
- 1 Tbsp mashed, steamed, salted egg yolk
- 1/2 Tbsp salted fish – soaked, deboned
Couple of points –
- as you can see from my video, you can achieve pretty decent stir-fry results using just a dinky little portable gas stove
- having said that, the less powerful your stove, the smaller your batch of stir-fry should be – that was a single serve of fried rice.
