Acar (Easy Recipe)


  • ½ medium-sized cabbage, cut into ¾” widths
  • 4 cucumbers, cored and julienned
  • 3 carrots, julienned
  • 2 cups peanuts, skin off, roasted, then crushed
  • ¼ cup sesame seeds, roasted
  • 1 ½ cups fried shallots (or 2 brown onions, peeled & quartered)
  • ¼ cup dried garlic granules (or 4 cloves fresh garlic, peeled)
  • 1-inch knob of galangal or ½ Tbsp galangal powder
  • 4 fresh or soaked dried chillies or 1 Tbsp chilli powder
  • 2-inch knob of turmeric or 1 Tbsp turmeric powder
  • 1 Tbsp belacan (optional)
  • 1L white vinegar
  • 1 cup water
  • 1 Tbsp salt
  • 1 cup sugar
  • 4 Tbsp oil


  1. Blend galangal, turmeric and chillies. Add onion, garlic, blend further, then transfer into frying pan and saute for 10 minutes or until aromatic and oil separates.
  2. In a deep saucepan, bring vinegar and water to a boil.
  3. Poach vegetables separately, strain, then add fried spice paste, salt and sugar.
  4. Mix well, then add peanuts and sesame seeds.
  5. Allow to cool, then store in jars. Keep refrigerated until use.
