Acar (Easy Recipe)
INGREDIENTS:
- ½ medium-sized cabbage, cut into ¾” widths
- 4 cucumbers, cored and julienned
- 3 carrots, julienned
- 2 cups peanuts, skin off, roasted, then crushed
- ¼ cup sesame seeds, roasted
- 1 ½ cups fried shallots (or 2 brown onions, peeled & quartered)
- ¼ cup dried garlic granules (or 4 cloves fresh garlic, peeled)
- 1-inch knob of galangal or ½ Tbsp galangal powder
- 4 fresh or soaked dried chillies or 1 Tbsp chilli powder
- 2-inch knob of turmeric or 1 Tbsp turmeric powder
- 1 Tbsp belacan (optional)
- 1L white vinegar
- 1 cup water
- 1 Tbsp salt
- 1 cup sugar
- 4 Tbsp oil
METHOD:
- Blend galangal, turmeric and chillies. Add onion, garlic, blend further, then transfer into frying pan and saute for 10 minutes or until aromatic and oil separates.
- In a deep saucepan, bring vinegar and water to a boil.
- Poach vegetables separately, strain, then add fried spice paste, salt and sugar.
- Mix well, then add peanuts and sesame seeds.
- Allow to cool, then store in jars. Keep refrigerated until use.
