Recipe for Maggi Ketam (Claypot Crab with Maggi Noodles) from Indra Tom Yam
One trend I’ve noticed in my trips to Malaysia in recent years is the use of Maggi ie. instant noodles in some street food dishes. You might come across Maggi Goreng (ie. fried Maggi noodles) cooked Mee Goreng-style at some food courts, and I’ve had Maggi Udang ie. Mee Udang (Malay prawn noodles) served with Maggi noodles as well.
During our trip to Kelantan, we visited an outdoor restaurant famous for its Maggi Ketam – Maggi Noodles with Crab.

MAGGI KETAM (Kelantan Crab Noodles)
INGREDIENTS:
- 2 Tbsp Cooking oil
- 3 Cloves garlic, minced
- 1/2 brown onion, chopped
- 1 Tbsp Chillies, minced
- 1 Tbsp Oyster sauce
- 1 Tbsp Chilli sauce
- ½ Tbsp Lime juice
- Chinese greens (Choy Sum or similar)
- 1 Tbsp peppercorns
- 1/3 Tbsp chicken stock granules
- 1/3 Tbsp Curry Powder
- 1/2 Tbsp Dried Shrimp, ground
- 4-5 pcs Crabs, medium size (optional – prawns, squid & chicken)
- 2 packs Maggi Noodles
- 1L Shrimp stock
METHOD:
- Heat oil in a wok and fry the garlic, onion and minced chilli.
- Pour in some shrimp stock.
- Add chilli sauce, oyster sauce, chicken stock granules and curry powder.
- Add the crabs and cook for 5 minutes on medium heat. Add the cabbage, prawns, squid and chicken.
- Add Maggi noodles. Cook another 3 minutes, then remove from heat and serve.
