Hi Ben, good question – with the rice cooker I’d do it the same way as boiling it in a pot, except I don’t have to worry about changing the heat setting since it’s all automated. I guess you’d know with a rice cooker, it’s meant to be ready when the ‘cook’ button pops up – but especially with coconut rice, it doesn’t always mean it is. If the rice isn’t cooked through properly, what I do is wait a couple of minutes, then press the button down again to get it to continue cooking – a bit of a pain, I know!
